Pumpkin Spice!

OK, I have to admit, I'm basically stealing this entry from my lovely friend, Monica. She gave me the recipe and also made a post about her experience baking these Pumpkin Spice Cupcakes with Honey Cinnamon Cream Cheese Frosting. Yes, it's an experience!

Imitation is the sincerest form of flattery, right?

The recipe comes from here and is easy and fabulous. It took me a couple of hours because I only have one muffin tin and it makes 24 cupcakes, but I tackled it yesterday morning and they are amazingly delicious! 

The recipe uses a spice cake boxed mix, with an entire can of pumpkin added. I chose this organic pumpkin because it was nearly the same price as Libby's, and when I can, I go organic.

The eggs were also organic. Spice cake mix, cinnamon, and oil were not.

They turned out perfectly. They just look yummy, even without frosting. And so moist!

The frosting was killer. Lots of sugar, a whole stick of butter, and half a container of cream cheese. It compliments the cake incredibly well though.
I used the same "baggie" frosting technique as Monica.
It worked well but the frosting was a little..wet? It dripped a bit.

So yes, this project encompassed my Saturday morning but it was actually, dare I say, fun! I really enjoyed it. I've turned a corner with cooking and baking. I've started experiencing food and not just consuming it. I've really come to appreciate the process, and I'm excited to experiment in the future!

  1. How funny! I FINALLY made my pumpkin muffins you and I were discussing earlier this week, using the fresh pumpkin that I baked and mashed up myself. You should give fresh pumpkin a try again- it's really NOT scary and super easy! I'm going to write about how I did it. It just takes a long time (my muffins are baking as I write this at 6:00 and I started at 2:30!)

    Your muffins look super delicious and pretty (Mine aren't pretty since they're so dense (its a bread recipe adapted)) I NEED to try that frosting next time!

    I've always loved cooking and baking...I can never get enough. I could seriously cook all day haha.

  6. Wow. The cupcakes look just PERFECT. I'd DIE to try them, except you can't get most of the ingredients down here, but just looking at the pictures of yours makes me happy, haha!
