Homemade: Honey Almond Granola

The closer it gets, the more I wonder when it’s going to feel like Christmas. The rain isn’t helping. Maybe it will click during my solo nine hour drive to Michigan on Friday? Regardless, it’s a wonderful time of year, no?

We celebrated Christmas early with Matt’s family last night, since I’ll be in Michigan for the holiday. We ate sausage from the Farmer’s Larder (sustainable, local, wholesome) and, though I’m not a fan of most sausage, I would love to bath in the Farmer’s Larder sausage, it was that good. We opened gifts and celebrated each other’s company.

Earlier in the day, I made a batch of homemade granola. I don’t mean to sound like Betty Crocker here, just whipping up granola, hand scrub, and mashed potatoes in my spare time, but there are actually a lot of foods that take little to no time to prepare that are so much better when they’re homemade.

Granola is one of those things.

I used a very basic granola recipe from My New Roots. It made somewhere around 7-8 cups and I didn’t change a thing, so check it out on her page. I also love her list of possible additions to the base granola!

Mine included rolled oats (not instant), sliced almonds, coconut, honey, and coconut oil.

Mix dry, mix wet (after melding together on the stove), spread out on parchment paper, and bake at 350 degrees, stirring every five minutes until golden brown (anywhere from 15-25 minutes). Yes, the stirring is tedious but it can burn easily. In fact, a bit of mine did. Keep your eye on it! Unload the dishwasher in between or something.

Pull together your empty mason jars. I threw in chocolate chips to some of the jars, but like I mentioned, check out the variety on My New Roots!

This mixture will last for weeks in an air-tight jar or other container, and is perfect for picky granola-eaters, because it’s totally customizable. Recipients can add anything they like to the mix!

I added some sweet tags (scrapbooking cutouts) and a couple spoons, and they’re ready to give!
