Crispy Pasta with Veggies

Friday again? I can barely believe it. After a busy week at work, we’re headed to the Cardinals game tonight. However, for dinner we are attempting our first (and the first of the season) Food Truck Friday!

15+ food trucks, all in one place, itching to serve me?! I die.

Before I leave for the game (and food trucks), here is a quick recipe to make when you’ve been running errands all day and want something quick and tasty for dinner. Inspired by Vegetarian Times, I like to call this recipe:

Crispy Pasta with Veggies

Ingredients (serves 2)

  • 8-10 oz pasta of your choice
  • 2 tbsp olive oil or butter
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/2 cup dried breadcrumbs
  • Salt and pepper
  • 2 cups haricot verts or vegetable of your choice

Instructions

Cook pasta according to package directions. Drain then set aside.

Cook your haricot verts or chosen vegetable as desired. For a quick meal, steam in the microwave, or in a skillet before adding the shallot and garlic in the next step. You’ll want your veg to be cooked before you add the shallot and garlic.

Heat 1 tablespoon olive oil in a skillet over medium heat. Add shallot and garlic and cook until fragrant, 1-2 minutes. Stir in the breadcrumbs and mix with 1 tablespoon butter or olive oil. Cook 2-3 minutes until breadcrumbs begin to brown (they can burn quickly, once they start to brown!). Once the crumbs are browned, add the pasta and vegetable and toss with crumbs, cooking 1-2 minutes more. Season with salt and pepper and serve!

Because this was a quick and easy night for us, I used my favorite brand of frozen organic ravioli, Rising Moon Organics. The breadcrumbs and haricot verts add a crunch and it sort of reminds you of STL-famous toasted ravioli (which I also made with Rising Moon pasta)!

Use your favorite pasta (cook first), favorite vegetable (cook second), and sauté away with toasted crumbs and garlic (cook third)! Eat this with a side salad and a piece of toast and you’ll be full, promise.

  1. That looks DELICIOUS! WOW. YUM. And I have *most* of those items at home. Always love a good pantry recipe :)

    Food trucks are huge here. There’s one called the cinnamon snail that’s vegan; I stalk, errr, follow them on Twitter and always hope they’ll make an appearance in my area. Sounds like fun–have a great weekend, love!
